Quick Post about Quick Food | 5.30.17

I have fallen in love.

It took me about 5 months to try using the Instant Pot that I got from my parents for Christmas last year. When I did, I made brown rice in 12 minutes. The second time I used it, I made brown rice again. Then, I ventured out to chunks of potatoes cooked in vegetable stock in 5 minutes. Then vegetable soup in 3 minutes, and elbow pasta in 3 minutes as well. Then potatoes again, with different seasoning combinations, about 10 more times. I do have a couple of pressure cooker cookbooks but I’ve yet to make an actual recipe-recipe, however, I’m definitely enjoying using the thing!

Today, I made perfect basmati rice in 3 minutes!

 

What I love about the Instant Pot so far is that it has completely replaced my need to buy a(nother) rice cooker, and I foresee it replacing one or more other kitchen gadgets as I learn more about it in time as well. For me I often avoid making something like rice, barley, potatoes, or any other thing that takes a while, because I’ve waited too long to eat and I find myself shoveling in whatever is ready right then. But the instant pot has begun to rewire my thinking about how long it takes to cook something healthier and more sustaining, and I find myself making much better choices throughout the day.

And now…  my other new favorite kitchen-ish gadget! I say “ish” because while I’ll keep it in the kitchen, I’ll be cooking with it out on the grill….. drumroll……. the grill wok! My husband bought it for me yesterday when I was complaining about wanting grilled veggies but not wanting to hassle with skewering them all beforehand. I was also jokingly extending my birthday an additional day and asking what my present would be. So we ran into town, found the grill wok at Target and bought some veggies from Trader Joes! For dinner, we had basmati rice in 3 minutes in the Instant Pot, I made Vegan Yum Yum’s “Chili Lime Tofu” (does anyone know where in the world Lauren Ulm went??), and he grilled up our veggies (red and yellow bell peppers, yellow onions, zucchini, and cherry tomatoes, along with some pineapple spears). It was one of the tastiest (and fastest) meals we’ve had at home in a long while!

Today, I was craving more grilled veggie deliciousness so I set up the Instant Pot with another 3 minutes of basmati rice, grilled up some vegetables in even less time than we had last night since there was less in the pan, and devoured my meal like I hadn’t eaten in weeks.

So, there you have it! My two newest favorite cooking toys that just happen to compliment each other beautifully!

    Ooh, you know I’m so jelly of your Instant Pot. Loving that it is changing the way you eat and adding healthier meals to the line up. And the grill wok sounds so cool!
